Bacon. Water Chestnuts.


…And while you’re in the aisle where they put the bamboo shoots for your stir fry–grab a can or two of water chestnuts.

Then, wrap them in bacon.

And bake at about 375 for 25 or so minutes.

Drain ‘em off, add them to a deeper dish, and throw in a mixture of mayo, soy, siracha, lemon juice, and ketchup.

Sounds bad, but it’s not.

Put them back in the oven for about 15 minutes (or until they’re crispy brown and carmelized).

What I found is that people have no clue what water chestnuts are–but they’re willing to give ‘em a try if they’re all wrapped up in bacon deliciousness.

In the wild, they look like a root. They’re a vegetable and they grow in marshes.
