Balls. Zucchini & Feta.


So making zucchini and anything makes me really happy, and this is a great substitute for meatballs..if you happen to be of the non-meat persuasion, as I am.

 

2 Cups of Grated Zucchini (Squeezed. This is really important…as I found)

Feta

Minced garlic

2 Green onions

Dill

Salt and pepper

Parsley

1 egg

WW flour

Olive Oil

 

Mix the zucchini goodness in with the feta, herbs, onion and egg. Form into balls and roll in flour.

Cook in a griddle on medium heat…with olive oil coating the pan.

I served it with a yogurt/lemon/dill sauce.

And broccoli, apparently.
