Fake Fried Rice.


So, I made up some long grain brown rice (I made the lowest amount serving on the package, so I think we each ate about a half cup. It fed four people, plus a plate that got dropped, and then two people for leftovers tonight for dinner. Rice tends to do that.)

I added a package of microwaveable steam-fresh vegetables–cooked in the microwave.

Siracha chili paste.

About 1/4 cup of peppered, dry roasted, cashews.

And about 4, 3 ounce chops that were cubed up and cooked in a non-stick pan, with 1/4 cup of low sodium soy sauce.

I right before the pork was cooked, I threw in two eggs and scrambled them together.

Then I put it all together. Total cook time, 7 minutes. Total calorie count for a serving (which I’m new at putting together, so this is a rough estimate) 460.

460 calories of love.
