MM Eggplant Wrap.


Meatleass Monday Eggplant Wrap:

I sprayed a pan (LIGHTLY) with an olive oil cooking spray and preheated it for a hot second before I put sliced eggplant in. I seared it for about 3 minutes just to get it crisp and light brown.

Then, I cooked a few slices of tomato the same way.

So I put those on a tortilla with a bit of Dijon mustard, spinach, and mushrooms.

‘Lish and filling. Everything a meal is supposed to be, w/o meat.
